Instructions
Grease and line a square baking tray.
Blitz the coconut, apricots and dates in a food processor until well combined.
Press mixture firmly into baking tray and refrigerate for approximately 1 hour.
Cut into 80 small squares and coat them with the additional desiccated coconut, if using.
