Cheese & Olive Pinwheels
This recipe makes 6 serves. Leftovers can be stored in the fridge in an airtight container or freeze individual serves to defrost as required. Use any olives you prefer – green, black, stuffed etc.

- 1 clove garlic
- 1 tbsp dried rosemary
- 1 cup kalamata olives pitted and chopped
- 1 sheet reduced-fat puff pastry
- 1/2 cup reduced-fat cheddar cheese grated
Ingredients

- Preheat oven to 200C / gas mark 6 and line a tray with baking paper.
- Puree garlic, rosemary, and olives together to form a chunky paste.
- Cover the puff pastry with the olive paste and sprinkle evenly with cheese.
- Roll the pastry up until it looks like a long roll.
- Gently slice the roll into 6 equal sized segments.
- Place the pinwheels on the prepared tray and bake for 15 – 20 minutes until pastry is golden. 1 pinwheel is 1 serve.
