lean ground pork

small red chili
sliced

fish sauce

lime juice

red pepper

iceberg lettuce
shredded

medium carrot
grated

mint leaves

finely sliced

apple cider vinegar

Instructions
Cook rice according to package directions and allow to cool (can be prepared in advance).
Heat half the olive oil in a frying pan add pork and cook for a couple of minutes until browned all over, use a wooden spoon to break up any lumps.
Add chili, fish sauce and lime juice. Stir to combine then remove from the heat.
To assemble place the rice in a bowl with the chili pork.
Place red pepper, lettuce and carrot in separate sections of the bowl. Sprinkle over the mint leaves and green onion.
Whisk together the remaining olive oil and the apple cider vinegar and drizzle over the bowl.
Sprinkle with sesame seeds to serve.
