Ingredients

desiccated coconut
1/2
cup
almonds

tbsp
honey

tbsp
coconut oil
melted

tbsp
lemon juice

tsp
lemon zest
Instructions
Place all ingredients, excluding ½ a cup of the coconut, into a food processor and blend for 1 minute. Place mix in the refrigerator for 30 minutes.
Roll chilled mix into small balls around the size of a dime. There should be enough mixture to roll 15 balls.
Roll balls in remaining coconut.
Place on a lined tray and chill in the fridge until firm.
Makes approx 15 balls. 1 ball is 1 serve. Store leftovers in an airtight container in the fridge for a week or more. Or freeze for up to a month.
