Lemon & Coconut Muffins

These simple muffins from the 28 Day Weight Loss Challenge are easy to make and perfect for school lunches and family picnics.

This recipe makes 6 muffins, but you can easily double it if you want to make 12 instead.

Instructions
  1. Preheat oven to 350F. Line 6 cups of a muffin tray with paper or silicone cases, or spray lightly with oil.
  2. Combine 1 teaspoon of the honey and 1 teaspoon of the lemon juice. Set aside until muffins are baked.
  3. Combine flour, baking powder and 1/4 teaspoon of salt. Whisk together well so the baking powder and salt are evenly distributed within the flour.
  4. Combine the flour mix with the almond meal/almond flour, coconut and lemon zest in a large bowl. Whisk wet ingredients in another bowl. Add wet to dry and stir until just combined - do not over mix.
  5. Divide mix evenly between the muffin cups and bake for 20-25 minutes or until a skewer comes out clean.
  6. Remove muffins from oven, turn onto a cooling rack and brush with the honey lemon syrup while still warm. One muffin is one serving.
