Low-Carb Lemon & Tuna ‘Spaghetti’
A super delicious low-carb meal using zucchini noodles instead of wheat based pasta for a healthy alternative. On the table in under 10 minutes! Mix and match ingredients to suit what you have available.

- 2 zucchinis
- 4 tsp extra virgin olive oil
- 1/2 red onion thinly sliced
- 2 cloves garlic diced
- 6 oz canned tuna in water
- 2 tbsp lemon juice
- 2 tsp lemon zest
- 1 cup fresh parsley chopped
- 2 tbsp pine nuts
- 2 tbsp grated Parmesan
Ingredients

- Use a spiralizer or peeler to slice zucchini into noodles.
- Heat olive oil in a frying pan, add onion and garlic and sauté for a minute or two.
- Add the tuna and zucchini noodles and stir to combine ingredients.
- Remove from the heat, add lemon juice, zest, parsley, pine nuts and Parmesan.
- Toss to combine and serve immediately.
