Lentil Soup
  1. Lightly spray a saucepan with cooking oil and heat over medium-high.
  2. Add onion, carrots, celery and sweet potatoes. Cook for 3 minutes then add drained lentils, stock and rice.
  3. Cover the saucepan with a lid and reduce heat to a simmer for 30-40 minutes or until rice is tender. If you need to, add more stock or water until you reach the consistency you like.
  4. Divide between 4 bowls to serve or freeze for another meal.
