- 1/2 tbsp coconut oil
- 1 brown onion finely diced
- 2 medium carrots finely diced
- 2 stalks celery finely diced
- 2 small sweet potatoes finely diced
- 1 medium potato chopped
- 1 cup kale leaves shredded
- 14 oz tinned brown lentils rinsed & drained
- 4 cups liquid vegetable stock salt reduced
- 1/2 cup brown rice uncooked
Ingredients

- Lightly spray a saucepan with cooking oil and heat over medium-high.
- Add onion, carrots, celery and sweet potatoes. Cook for 3 minutes then add drained lentils, stock and rice.
- Cover the saucepan with a lid and reduce heat to a simmer for 30-40 minutes or until rice is tender. If you need to, add more stock or water until you reach the consistency you like.
- Divide between 4 bowls to serve or freeze for another meal.
