While turkey is roasting heat a saucepan over medium heat and add in 1 tsp of oil. Add the rinsed quinoa with the remaining 1 & 1/2 cups of water and fresh orange juice.
Bring to the boil, cover pan, reduce heat to low and simmer for 15 minutes. Remove from heat, keep covered and set aside for 10 minutes to allow quinoa to finish absorbing the liquid.
