2 SIMPLE meal prep tips that helped mom lose 30lbs in 9 months

Mom Cindy, who has lost a massive 30lbs in just 9 months following The Healthy Mommy 28 Day Weight Loss Challenges has some valuable tips to minimize your meal prep time and maximize your output of delicious meals.

Cindy is a 37 year old mom-of-2 from Michigan.

She started her Healthy Mommy journey 6 years ago after her first pregnancy and continued to follow The Healthy Mommy lifestyle after her second pregnancy – losing 55 lbs after each pregnancy.

She says “I then had another restart in January 2019. I’ve lost 30 pounds so far (in 9 months) by following The Healthy Mommy 28 Day Challenges and I have about another 5 pounds to go to reach my goal weight.

I have also had many ups and downs with restarts but in the end I have persisted and I can’t believe my results.

I have gained confidence, my health is better and I have more energy.”

Meal prepping for weight loss success

During her Healthy Mommy journey Cindy has learnt the importance of meal prep when it comes to achieving weight loss success.

And for her, even the SMALLEST of meal prep efforts can make a huge difference in helping her keep on track.

She shares two SUPER SIMPLE meal prep and meal planning tips below.

Hate chopping onions? You are not alone!

Onions can be our best friend when it comes to adding flavor to our meals yet chopping them can be a real pain in the neck!. Not to mention leaving us with mascara running down our face!

But it needn’t be that way. Cindy has a great suggestion for those moms who don’t like chopping onions – simply put them in the food processor!.

She says “Who else hates cutting onions?

1. Use food processor to cut onions, then freeze your cut vegetables

“I had my food processor out today so I pre cut my onions, carrots and zucchini for the week so I can freeze them”.

The saves me time during the week and avoids waste” says Cindy.

Cindy noticed that many of the meals that she cooks include some of these three vegetables so having them pre-cut and ready to go is a major bonus. Some veggies will be cut and some grated depending on meal choices.

Note: If planning to freeze your chopped onions just make sure you don’t chop them too fine (especially if chopping with a food processor) as they can go a little mushy when defrosted.

2. Plan meals around those with similar key ingredients

Got ground beef? Here are just a few examples to choose from.

Planning meals around using similar ingredients speeds up Cindy’s time in the kitchen and helps keep her food expenses down.

For example in one week Cindy might make Stovetop Lasagne, Beef Burgers, Hidden Veggie Sausage rolls (all of which required onions, carrots, zucchini and ground beef) and Chicken Meatloaf and Hidden Veggie Chicken Nuggests which need the addition of chicken.

Some these meals she will enjoy during that week and others she will freeze and enjoy at a later date when she is pressed for time.

She shares some of her meal creations below.

Stovetop lasagne

The stovetop lasagne is a family favorite and great for freezing or using as leftovers.

Beef burgers

To mix things up a little Cindy will make burgers one night (she chooses the bunless option) and freezes the remainder of the prepared burger paddies for another week. This will save her time that following week.

The kids won’t even know they are eating extra vegetables hidden in these burger paddies.

Hidden Veggie Sausage Rolls

The name says it all.  These delicious parcels can be enjoyed hot or cold (great for lunch box snacks for the kids).

Keep it simple!

On another week Cindy might make Chicken meatloaf and hidden veggie chicken nuggets. Again using some of the frozen onions, carrots and zucchini she has pre-prepared.
