Set aside 2 tablespoons of the desiccated coconut for rolling the balls.
Add apricots to a food processor and blitz until finely chopped.
Add rolled oats, remaining desiccated coconut and coconut oil and blitz until combined.
Shape mix into 24 small balls and roll in set aside coconut. Two balls is one serve. Store leftovers in an airtight container in the fridge for 1-2 weeks.
