Peanut Butter & Banana Crepes
This recipe is one for the whole family and perfect for a healthy breakfast treat that can be on the table in under 15 minutes.

- 2/3 cup whole wheat flour
- 4 free-range eggs
- 1 cup reduced-fat milk of choice
- 2 tsp coconut oil
- 4 tsp butter
- 4 tsp peanut butter
- 4 small bananas sliced

- Make crepe batter by mixing flour, egg, milk and oil until smooth, add a little water if needed to make a thin batter.
- If preparing more than one serving, cook one serving at a time as follows: melt half a teaspoon of butter per serving in a frying pan over medium-high heat, add a 1/4 cup of the crepe batter per serving, swirling to cover the bottom of the pan. Cook for about 3 minutes on each side. Remove crepe and set aside to keep warm.
- Heat the remaining butter (per serving) and cook the remaining batter. You should be able to make 2 crepes per serving.
- Spread each crepe with a little peanut butter and top with some slices of banana. Wrap each crepe up to serve.
