Apricot and Oat Bliss Balls

- Set aside 2 tablespoons of the desiccated coconut for rolling the balls.
- Add apricots to a food processor and blitz until finely chopped.
- Add rolled oats, remaining desiccated coconut and coconut oil and blitz until combined.
- Shape mix into 24 small balls and roll in set aside coconut. Two balls is one serve. Store leftovers in an airtight container in the fridge for 1-2 weeks.
