Beet, Mint & Cashew Dip

- 4 baby fresh beetroot peeled & chopped
- 1/3 cup reduced-fat Greek natural yoghurt
- 1/3 cup cashew nuts unsalted
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1/3 cup mint leaves
- salt
- pepper
- 4 medium carrots peeled
Ingredients

- Steam the beetroot on the stovetop for 20 minutes or until very tender.
- Allow to cool then place in a food processor with the yogurt, cashews, lemon juice, olive oil and mint. Season with salt and pepper. Blitz until smooth.
- Slice carrot into batons and serve with dip.
