- 1/4 cup brown rice uncooked
- 1 tbsp extra virgin olive oil
- 0.4 lb lean ground pork
- 1/2 small red chili sliced
- 2 tsp fish sauce
- 2 tsp lime juice
- 1/2 red pepper sliced
- 1 cup iceberg lettuce shredded
- 1 medium carrot grated
- 1/4 cup mint leaves shredded
- 1/2 green onion finely sliced
- 2 tsp apple cider vinegar
- 1 tsp sesame seeds

- Cook rice according to package directions and allow to cool (can be prepared in advance).โจ
- Heat half the olive oil in a frying pan add pork and cook for a couple of minutes until browned all over, use a wooden spoon to break up any lumps.
- Add chili, fish sauce and lime juice. Stir to combine then remove from the heat.
- To assemble place the rice in a bowl with the chili pork.
- Place red pepper, lettuce and carrot in separate sections of the bowl. Sprinkle over the mint leaves and green onion.โจ
- Whisk together the remaining olive oil and the apple cider vinegar and drizzle over the bowl.
- Sprinkle with sesame seeds to serve.
