Instructions
  1. Preheat oven to 180C / gas mark 4. Lightly grease or line 6 holes of a mini muffin tin.
  2. Rinse quinoa and cook according to packet directions. Allow to cool slightly.
  3. Dice ham and combine with cooled quinoa, egg, egg white, courgette, cheese and Parmesan.
  4. Spoon batter evenly into prepared muffin tin holes. Bake for 20 minutes or until golden and cooked through.
  5. Allow to cool before removing from the tin.
  6. 2 mini muffins is 1 serve.
  7. Store leftovers in an airtight container in the fridge or freeze.
